What is CCP?

A CCP stands for Critical Control Point. It is a point where absence or failure of procedure can cause adverse effect on human health. Is a step or procedure at which controls must be applied to prevent or reduce a food safety hazard to safe acceptable levels. E.G Ensuring temperature for cooking high risk foods is ≥ 75° C

Do staff need to be trained in food safety?

It is a legal requirement that staff who handle and prepare food within a business are trained and/or supervised commensurate with their work activity. It is the proprietor of the food business responsibility to provide such under supervision and training of staff.

Do staff need HACCP Training?

Staff who are responsible for the development and maintenance of the business Food Safety Management system (HACCP ) must have received adequate training in the principles of HACCP.

Do I need to display list of allergens on the menu

Under the New Food Regulation 1169/2011/EU, from 13th December 2014 all foodstuffs including open food counters and menus must indicate the presence of any of the 14 Allergens.

How long must I retain all HACCP Documents?

Good practice to keep all records for 2 years, including staff medical certificates.

Must I carry out hygiene inspection/audit on my business?

When you have implemented your HACCP system, you must verify to confirm that it been implemented as planned. This is achieved through monthly internal or external auditing.
